Ingredients:
8 oz whole grain rotini pasta
10-12 cherry tomato, halved
1 red pepper, chopped
1 green pepper, chopped
½ small red onion, chopped
2 cups spring mix
1 can chickpeas, drained
½ cup feta cheese, crumbled
¼ cup Kalamata olives
Dressing:
1 cup plain yogurt
¼ cup mayonnaise
2 tbsp lemon juice
½ tsp garlic powder
1 tsp oregano
2 tbsp water, as needed
Salt, to taste
Pepper, to taste
Directions:
- Cook pasta as per box directions.
- Combine vegetables, chickpeas, feta cheese and olives with pasta.
- In a bowl mix together ingredients for the yogurt dressing.
- When ready to serve, add the yogurt dressing to the pasta salad. Enjoy.
