Do you like to eat granola? If you’re like me granola is an essential item in my pantry. I love having it for breakfast, adding it to yogurt or eating it as a snack. If you’re not familiar with granola, it’s basically a mixture of oats, sweetener and nuts baked together until golden brown. It’s crunchy, sweet, and satisfying. The oats in granola provide a good source of fiber and the nuts and seeds provide healthy fats and protein. There are many ready-made granola in store but those tend to be high in sugar and fat. Although they can be a great option if you’re traveling or on the go, homemade granola is easy to make, customizable, and can be more nourishing.

I have been making granola using this exact recipe for months now and my family loves it. I have this for breakfast at least a few times a week.

Making the Perfect Granola

Here are my top tips to making the perfect granola:

  • Heating the honey and oil mixture is key to making crunchy granola. From my experience skipping this step will not get you the crunchiest granola
  • Mix the oats with the honey and oil mixture really well. This will help with even toasting
  • Spread the oat mixture on the sheet pan in a thin layer. Overcrowding the pan will result in uneven cooking and soggy granola
  • Once the granola is golden brown, remove from the oven and leave to cool (this is hard I know!). This helps the granola form into clusters.
  • Once cooled, store immediately in an airtight container for optimal freshness.

Ingredients

  • 3 cups old fashioned rolled oats
  • 1 cup puffed brown rice
  • 1/3 cup canola oil
  • 1/3 cup honey
  • ¼ cup almonds
  • ¼ c pumpkin seeds
  • ¼ cup sunflower seeds
  • 1 tsp cinnamon
  • ¼ tsp salt
  • 1 tbsp ground flaxseed
  • optional: dried cranberries dried date slices

Instructions

  1. Preheat the oven to 350oF and prepare a large sheet pan with parchment paper. Set aside.
  2. In a large bowl add the oats, rice puffs, cinnamon, salt, nuts and seeds. Set aside.

  3. In a small pan on the stovetop, add the honey and oil. Mix together under medium heat for a minute just until the contents combine together.

  4. Pour the honey and oil mixture on top of the oat mixture and mix all contents together until the oats are well coated.

  5. Using a spatula pour the granola onto the sheet pan and spread into a thin layer.

  6. Bake in the oven for 12 minutes or until golden brown.

  7. Remove from the oven and leave to cool for at least 10 minutes (this part is the hardest). Avoid mixing it so the granola doesn’t break into small pieces.

  8. Once cool, break up the granola into medium to small pieces. At this point you can add any dried fruit you wish.

  9.  Store granola in an airtight container for up to two weeks (if it lasts that long!) Enjoy!
